7/6/2005 Omelettes From George 2 eggs per omelette Dollup of milk 1 slice Onion, chopped Cheese 2 slices Ham, chopped Pepper Butter Chop up onion, ham. Beat eggs, milk, and pepper. Preheat omelette pan with a little butter to Med-Hi. Fry onions in butter until tender. Pour eggs over onions, and add ham to a smaller pan set to med-hi. Cook omelette in omelette pan with lid for about 2 minutes, or until top is mostly congealed. Add ham in the middle, and shred cheese on top. Replace lid of pan, and cook for another 30 seconds or so, until the cheese melts and the eggs are finished cooking. Fold over one side of the omelette while it is still in the pan. When serving the omelette, fold over the other side to the bottom as you are transferring it to the plate.
