5/2003 Migas From Bbz 1/2 tbsp salted butter About three cross-cuts of Onion, chopped Leftover hamburger from tacos, about 1/4 pound 4 Eggs 1 tbsp Salsa About 1/2 of a Tomato, diced and *drained* Bbq corn chips, corn chips, or tortilla chips Whatever else is lying around Cheddar cheese, 2 - 3 oz finely shredded Put the butter in a frying pan on med - med hi. Cook the onions a bit to take the bite off, with the leftover hamburger to heat it up. Meanwhile: Mix some eggs (four's probably fine) with 1 tbsp salsa. When the hamburger looks warmed up, stir in the eggs, and pretend you're scrambling them. When the eggs are about half scrambled, toss in the tomato. (Try to keep the mixture from getting wet from the tomato pieces. It's going to be runny enough.) When the eggs are done, turn off the pan, sprinkle with a few corn chips (you may want to leave the chips out until it is done because they get soggy pretty quick) and cheese, and cover. Let sit for 1 min so the cheese can melt. Serve.
