7/26/2003 Lemon Chicken Pasta (Original) (Don't eat this - see "Chicken Noodle Non-Soup" recipe) From Jo & Josh's low-fat cookbook Noodles: 2 c cooked bowtie pasta Chicken mixture: 1 tsp olive oil 3 cloves garlic, minced 6 oz chicken breast, cut into 1/4 inch wide strips 1/2 c frozen english peas, thawed 1/3 c shredded carrot Sauce: 1/2 c low sodium chicken broth, undiluted 2 tbsp light cream cheese Last: 3 tbsp grated parmesan 1/2 t grated lemon rind 1/8 t salt 1/8 t pepper Chicken mixture: Put oil in skillet, put over med high heat til hot. Saute garlic 15 seconds Saute chicken 1 minute Saute peas and carrots one minute Remove all from skillet, set aside Sauce: Add broth and cream cheese to skillet. Cook 3 minutes or until cheese melts. Stir constantly with wire wisk. Stir in chicken mixture, noodles, and last 4 ingredients. Cook 1 minute. Serves 2.
