8/20/2005 Fried Tilapia George made up from watching Mark Jensen cook fish, and from eating Joe's Crab Shack's salty lemon pepper fish (USUALLY, YOU'LL DOUBLE THIS) .5 lb fish 2 tbsp butter 1/4 c milk for dredging 1/4 c flour for dredging 1/2? tsp lemon-pepper mix for dredging pepper lemon for serving Mix flour and lemon-pepper. (Hint - spread flour out in the bottom of a wide dish, then sprinkle the lemon pepper on top.) Wash fish filets (they'll feel rubbery), dredge in milk, then in the flour mixture. Preheat frying pan to Med-hi to Hi, melt butter. Place filets in pan. (You can sprinkle them with a little more lemon pepper.) When edges start to whiten (1-2 minutes), flip. Cook about a minute more. Serve with lemon wedges.
