Flour Tortillas (Tortillas Harina) George 1/27/2006 1 1/4 c flour 1+ tsp baking powder 1/4 tsp salt 1/4 c shortening 1/3 c warm water Makes 6 In a large bowl, stir together the flour, salt and baking powder. With a pastry blender, a fork, or your hands, gradually work in the shortening until it is all incorporated. Add the warm water to make a soft but not sticky dough. Turn out onto a lightly floured board and knead for 5 minutes. Divide the dough into larger-than-golf-ball-size portions and form them into balls. Roll out each ball into a flat round about 6 inches in diameter and 1/8 inches thick. Heat a large heavy skillet over medium high heat. (Note - this will MELT a plastic spatula.) Place the tortillas one at a time into the dry hot skillet. Cook until brown on one side, (somewhere between 5-15 seconds, when edges look dry) then turn and brown the other side. Remove from the skillet and keep warm under towel (will stay slightly moist).
