2/28/2005 Broiled Fish Based on http://www.cooks.com/rec/doc/0,1818,155175-236203,00.html 1 lb fish (we used "wild scarlet snapper") 3 tbsp butter 1 tbsp lemon juice 1/4 tsp salt Dash of pepper 1/2 tsp crushed dried mint leaves 1/2 tsp oregano Paprika for topping Arrange fillets on greased broiler pan. Blend butter with lemon juice, salt, pepper, mint and oregano. Spread over fish fillets. Broil 3 inches from heat 3-5 minutes or until fish flakes easily with fork. Sprinkle with paprika. Serve with lemon wedges and black olives. 3-4 servings. george used 1 tbsp salted butter 1 tbsp lemon juice pepper mint oregano paprika i used too many spices also, the fish didn't get done all the way through - i think it was still a little frozen.
