12/5/1999 Dutch Fries From Mammy Smith potatoes Peel potatoes. (Dad doesn't do this step) Wash potatoes. Slice them 1/4 inch think. Put potatoes in water and bring to a boil. Cook until they are sorta soft, about 12 minutes. (You have to check - all stoves and slices are different) Heat about 1/4 inch vegetable oil in a fry pan or two to 350. Drain the slices. Lay flat in hot oil. Fry on one side then turn, about 10 minutes on a side, probably a bit longer. I think you can skip the boil if you are willing to fry a little longer. I wouldn't skip the boil.
