Chocolate Chocolate Chunk Cookies (or What To Do If You Have Extra Chocolate Lying Around) 12/10/2006 From the back of the Baker's Semi-sweet chocolate box 2 pkg (8 squares each) = 16 oz semi-sweet baking chocolate 3/4 c firmly packed brown sugar 1/4 c butter, softened 2 eggs 1 tsp vanilla 1/2 c flour (If omitting nuts, increase flour to 3/4 c to prevent spreading. Makes about 15 large cookies.) 1/4 tsp baking powder 2 c chopped walnuts (optional) Coarsely chop half of the chocolate. Microwave remaining chocolate on high 2 minutes. Stir until chocolate is melted and smooth. Add sugar, butter, eggs, and vanilla. Stir with wooden spoon until well blended. Add flour and baking powder. Mix well. Stir in chopped chocolate and walnuts. Drop scant 1/4 cupfuls of "dough" (more like batter) on ungreased baking sheet. Bake at 350 for 13 to 14 minutes or until cookies are puffed and feel set to the touch. Cool 1 minute, remove from baking sheets. Cool completely on wire racks (can transfer to a plate, but do NOT cool on paper towels). Makes 18 servings, 1 large cookie each.
