11/3/2003 Vanishing Oatmeal Raisin Cookies Modified from Quaker Oats container 1 c (2 sticks) butter, softened 1 c firmly packed brown sugar 1/2 c granulated sugar 2 eggs 1 tsp vanilla 1 1/2 c all purpose flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp salt (optional - I left out) 3 c uncooked Quaker oats (quick or old-fashioned) 1 c raisins Heat oven to 350. In a LARGE bowl, combine butter, brown sugar, and sugar. Mix well. Add eggs and vanilla. Mix. In a SMALL bowl, combine flour, baking soda, and cinnamon. (And salt, if using salt.) Combine sugar and flour mixtures. Stir in oats and raisins. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 10 to 12 minutes until golden brown. (Very slightly browned, or they taste a little burnt.) Makes about 4 dozen cookies.
