This is quick to put together, so preheat the oven to 350-375 first. Move the oven rack pretty high. Cooking Spray Dry Ingredients: 2 1/4 c (11.25 oz) all purpose flour 1 3/4 c (10.15 oz) corn meal 1/2 c (3.6 oz) sugar 3/4 tsp baking powder 3/4 tsp baking soda 3/4 tsp salt pepper Wet Ingredients: 3 eggs, slightly beaten to break up the yolks 3/4 c milk 3/4 c buttermilk 1/3 c vegetable oil 1/4 c honey 14 oz can creamed corn (& its liquid) Combine all dry ingredients in a large bowl, and whisk together. Combine all wet ingredients in a separate medium bowl and whisk together. Pour wet ingredients into dry ingredients. Stir just until blended - do not overmix. Spray 9x13 glass pan with cooking spray. Pour batter into pan. I sprinkled some large crystal sugar on the top. Bake 30 minutes until toothpick comes out clean. If baking as muffins: Fill cups 2/3 full, bake 18-20 minutes until toothpick comes out clean. 1/6/2010 Next time, try this: Dry: 1 tsp baking powder 1 tsp baking soda 11 oz unbleached all-purpose flour 5 oz cornmeal 3/4 tsp salt 1/8 tsp pepper 6 oz cheddar cheese Liquid: 2.5 oz unsalted butter 3 oz brown sugar 1.5 oz sugar or honey 2 eggs (maybe 3?) 4 oz sour cream 4 oz milk 14 oz can creamed corn & its liquid
