4/24/2007 Chicken and Broccoli 1/2 c soy sauce 4 tbsp brown sugar 4 cloves garlic, crushed 1 tsp ginger (not used) 2 tsp cornstarch 1/4 c water 3 lb chicken (cut in bite-size pieces) 4 tbsp (olive or sesame) oil 1 bunch broccoli 1/2 lg onion, chopped 1/4 c water Tobasco Rice Combine first 7 ingredients in bowl, mixing well. Marinate chicken in sauce for 10 minutes or longer. (Put rice into rice maker.) Drain chicken, reserving marinade. Heat oil in skillet. Cook chicken in small groups to prevent crowding. Stir-fry until brown. Remove from skillet and set aside. Add onion to hot skillet (may need a little more oil). Stir-fry until slightly soft. Add broccoli. Add 1/4 cup water, cover and steam for 3 minutes or until broccoli is tender-crisp. Return chicken to skillet, adding marinade. heat through, stirring constantly. Serve over rice.
