Because i'm a nerd." key: make buttermilk and eggs room temperature Makes 7 waffles in our iron. Dry stuff: 10 oz (2 c) flour 1 tsp baking powder 1/2 tsp baking soda 3/4 tsp salt 1 tbsp cornmeal (suggested by cooks illustrated, but i haven't tried it) Whisk together. Wet stuff: 2 oz (4 tbsp) unsalted butter melted 2 oz (4 tbsp) sugar 1 tsp vanilla or other extract 3 large eggs 16 oz (2 c) buttermilk (full fat or low fat but not non-fat) In large prep bowl, whisk together dry ingredients. In medium prep bowl, whisk together wet ingredients, one at a time. Fold together with rubber spatula, lumps are fine. Preheat iron, and spray with non-stick cooking spray. Use 1/2 c to 2/3 c batter per waffle. Serving suggestions: * Maple syrup * Blackberry syrup * Yogurt (try french vanilla bean, or strawberry) * Fresh strawberries (thinly sliced and combined with sugar) & ice cream Hints: * wait about 30 seconds after our waffle iron beeps before removing them. * Dry extra waffles for 1 hour at room temperature on drying rack, then freeze in baggie
