Chocolate Chip Banana Bread 1/31/2008 Adapted from: http://www.cooks.com/rec/doc/0,164,148190-238192,00.html WET MIXTURE - Large glass bowl: 1/2 c (4 oz) unsalted butter melted 1 c (7 oz) brown sugar 2 eggs 3 bananas 1/2 tsp vanilla DRY MIXTURE - Medium glass bowl: 2 c (10 oz) flour 1/2 tsp baking soda 1 tsp baking powder 1/2 tsp salt 3/4 c (6 oz) chocolate chips Other potential ingredients: milk/buttermilk cinnamon yogurt orange juice frozen fruit Heat oven to 350 Grease 2 bread pans (9x5x3), or prepare 16 muffin cups Cook time: 30-45 minutes (?) for two bread pans Cook time: 1 hour for 1 bread pan. Consistency is much better if baked into smaller loaves in two pans. Cook time: 21-23 minutes for muffins (fill empty cups with a 1/4" water) Using hand mixer, cream butter and sugar. Add eggs and vanilla, and mix in. Add bananas, and use the hand mixer to destroy them. Dump DRY MIXTURE into WET MIXTURE, mix well with a wooden spoon. Stir in chocolate chips.
